Are there any good Flight Sim/Shooter type games for PS3?

I'm talking along the lines of Colony Wars/Wing Commander/Ace Combat...

I downloaded the Top Gun demo from the PSN, but it was kind of underwhelming.

I hate the Top Gun game. Not sure what you're looking for but IL-2 Sturmovik: Birds of Prey is pretty good. It's down to $20 or less now.

I'll second the recommendation for IL-2 Sturmovik. I believe there's still a demo on PSN.
PS3 version supports a few PC flightsticks, and there are various settings for dialing in a little extra realism.
On the down side, the game sometimes comes down with a case of 'the browns.'

Sadly the ps3 is seriously lacking in space combat games. I hear 360 has a few, and a couple more on the way, but I don't have a 360, and I've yet to hear much good about those titles. I downloaded the top gun demo only because I was hoping to hear some Loggins, but it was lacking in the 'Danger Zone' department...
It's not like making a good Top Gun game is freaking rocket science, but I haven't seen it done yet.

I like Dark Star One. I wish it would come out on the PS3 as a download. I have it for the PC and I know its out for the 360 as a disk.

It's no Ace Combat, more of a Crimson Skies, but you might give a look at Red Baron. Not sure if there is a demo of it or not or if the online has any activity.
