Is it possible to replace the ROMS on a retail Coleco cartridge with EPROMS containing other games (PD games or conversions)?

You might want to look at the Atarimax Ultimate SD :-

It's possible, but there's simpler solutions. Most ColecoVision ROMs also include a required logic chip leading to the "chip select" line. You can add this yourself, but it might be a bit messy. Alternatively, I have a PCB available to replace the original PCB, if you're interested.

Yeah i am interested in the PCB 5-11under. I'm not too interested in the $129 multi-cart, GroovyBee, because if I were to spend that much $$$ on a retro system it would be on my Ataris...

No probs. I only suggested it because you didn't say if you already had an EPROM programmer, UV eraser and soldering iron. Which are the 3 things you'll need to go down the PCB route.
