Whats so different about the Sega Genesis output from nintendo, thats gives me a black and white ( or grayscale) Picture with my capture cards??

My Thoughts: SO Iam tring to capture my own gameplay from my Sega Genesis , I have seen A SNES converter for Genesis games, that allows you to play genesis games on the super Nintendo would this solve my capture issues .

Thats 2 questions for those who can help, it would be much appreciated.
